Mussels and Brussels Grain Bowl
Patagonia Provisions® tinned Smoked Mussels bring rich flavor and ready-to-eat protein to this grain bowl with vegetables, pecans and a maple-Dijon vinaigrette. We use farro but swap in your favorite.

A hearty grain bowl that uses brussels sprouts and sweet potatoes combined with our Smoked Mussels for protein and flavor. This recipe is for a single serving but can easily be doubled or quadrupled.
Ingredients for the Roasted Vegetables
- ½ sweet potato, cubed
- Handful of brussels sprouts, sliced in half
- Olive oil
- Salt and pepper
Ingredients for the Maple Vinaigrette
- ¼ cup apple cider vinegar
- 1 tbsp. Dijon mustard
- ¼ cup maple syrup
- ⅔ cup olive oil
- Salt and black pepper to taste
- 1 tbsp. diced shallot (optional)
- 1 tsp. thinly sliced sage (optional)
Ingredients for Building the Grain Bowl
- 1 cup cooked farro (or grain of choice)
- ¼ cup crushed pecans
- 1 tin Patagonia Provisions® Smoked Mussels
Putting It All Together
- Start by roasting the vegetables. Preheat the oven to 425°F. Add the cubed sweet potato and halved brussels sprouts to a baking sheet, spreading them out so they aren’t crowded. Use two baking sheets if needed. Drizzle generously with olive oil and toss to combine. Season well with salt and pepper and roast for 20 to 30 minutes, flipping the vegetables halfway through, until golden brown.
- While the vegetables are roasting, make the vinaigrette by placing all the ingredients into a jar with a lid. Shake well until combined. Taste and adjust seasonings as needed.
- When the vegetables are golden brown, begin building the bowl. Start with a layer of farro (or other grain), and top with the roasted sweet potatoes and brussels sprouts, crushed pecans and finally the mussels. Finish with the maple vinaigrette and mix well to combine.
